Adzuki Beans or Lal Chori Dal

Adzukis are one of the highest protein and lowest fat varieties of beans. They contain high levels of potassium and fiber, as well as B vitamins such as thiamin, niacin, and riboflavin, and minerals such as iron, zinc, and manganese. Aduki beans promote regular bowel movements, are a good source of energy, and help lower cholesterol.

My husband and I love this bean, not only due to its nutritional values, but also that it tastes amazing. If you are a beans person, this dish will not disappoint you.

You will need:

1 Cup Adzuki beans or lal chori dal
1/2 cup tomato puree
1 Small Onion, minced
1/2 tsp ginger garlic paste
1 sprig curry leaves
1 pinch asafoetida
1 tsp Ajwain
1/2 tsp Turmeric
1/2 tsp Red Chili Powder
1/2 tsp Garam Masala
2-3 Green Chili, chopped  (add more for increased spiciness)
1 tbsp Coconut, grated (fresh or frozen)
Lemon Juice to taste
Chopped Cilantro
1 tbsp Oil
1 cup water
Salt to taste

Method:

Soak the Adzuki beans or lal chori dal overnight after washing. Then boil it until semi-soft.
In pressure cooker, heat oil.
When the oil is hot enough add ajwain and let them turn a little brown
Add in the curry leaves, ginger-garlic paste, green chili, asafoetida, minced onion, tomato puree, and salt.
Cook until water begins to evaporate and the mixture becomes thick.
Add the Adzuki beans or lal chori dal, turmeric, red chili, garam masala, and 1 cup water and bring it to a boil.
Cover cooker with lid and let it cook until 1 whistle.
Let the pressure cooker cool.
Check the consistency and add more or less water accordingly. I like to serve this mostly with rotis and parathas so I make it thick.
Squeeze some lemon juice and throw in the chopped cilantro for garnishing.
Serve with roti, rice, or paratha.
